Shrimp Pomodoro with Whole Wheat Pasta - 6 servings

  • 1 1/2 lb 26-30 Shrimp, peeled & deveined
  • 4 ea Roma tomatoes, diced
  • 1 1/2 tbs Chopped Garlic
  • 2 tbs Chopped fresh parsley
  • 3 tbs Chopped large fresh basil leaves
  • 1/4 cup Olive Oil
  • 1/4 cup White Wine
  • Salt & White Pepper (to taste)
  • 1 lb Whole Wheat Angel Hair or Spaghetti Pasta (cooked according to directions)
  • 1/2 cup Fresh Grated Parmesan Cheese

Preparation:

Sauté shrimp & garlic in 1/4 cup olive oil for about 3-4 minutes. Add in tomatoes and fresh herbs and sauté for about another minute or so; deglaze with white wine and season to taste with salt and pepper. Toss in pasta to coat and plate. Top with parmesan cheese.

*Chicken, pork or veal can be substituted for shrimp.
