Healthy Blueberry Crisp - 6 servings
- 3 cups fresh or frozen blueberries (do not thaw frozen berries)
Topping:
- 1/4 cup Splenda Brown Sugar
- 1/2 cup Rolled Oats, uncooked
- 3/4 cup Grape Nuts Cereal
- 1/2 tsp Cinnamon
- 1/8 tsp Nutmeg (fresh grated)
- 1/4 Smart Balance Margarine (melted for 35 seconds in microwave oven)
Preparation:
- Preheat oven to 375 degrees
- Place blueberries in 8 x 8 x 2 Pyrex glass baking dish lightly sprayed with non-stick spray
- Combine all other ingredients and mix until mixture resembles coarse crumbs.
Sprinkle the crumb topping over berries. Bake for approximately 20-25 minutes until fruit is tender and topping is golden in color. Cool slightly before serving. Can be served with low-carb ice cream or sugar free whipped topping.
