Portabella, Romaine, and Mozzarella on Grilled Bread with Gorgonzola-Bacon Dressing
(serves four)

  • 4 ea portabella mushroom caps, cleaned
  • 1 head romaine, quartered
  • 8 oz mozzarella cheese
  • 1 loaf French bread
  • 2 ea tomatoes, slice
  • 1 basil, chopped
  • 2 oz olive oil
  • salt and pepper
  • 1 dressing, recipe follows

For the dressing-

  • 1/2 cup yogurt cheese
  • 1/2 cup sour cream
  • 1 tablespoon lemon juice
  • 1/4 teaspoon honey
  • 1/4 cup crumbled bleu cheese
  • 1/4 cup bacon, rendered
  • half and half
  • salt and pepper to taste

For the Mushrooms- Rub each one with olive oil, salt and pepper. Grill for 5 minutes each side, Keep warm. Do the same procedure for the bread; reduce grilling time to 1-2 minutes per side. Follow the same procedure for the romaine lettuce.

To assemble- Place grilled bread in center of each plate, top with mushroom, tomatoes, romaine, mozzarella slices, basil, and drizzle with dressing
